Crispy Desi Ghee Paratha Recipe (Dhaba Style at Home)

A paratha fried in oil is breakfast. The same paratha in desi ghee is an event. This desi ghee paratha recipe delivers dhaba-level crispness at home.
Ingredients (4 parathas)
2 cups atta, half teaspoon salt, 2 teaspoons ghee for the dough, warm water as needed, plus 4 teaspoons ghee for frying. Aloo or mooli filling optional.
Dough secrets
Mix atta, salt and ghee; rub to breadcrumbs. Add warm water slowly and knead 8 minutes till soft and smooth. Cover with a damp cloth and rest 20 minutes — resting relaxes gluten for flakiness.
Layering like a dhaba
Roll a 6-inch disc, spread half teaspoon ghee, dust flour, pleat like a fan, coil into a spiral and flatten. Rest 5 minutes, then roll gently. Layers = flakes.
Frying method
Hot tawa, medium-high flame. Cook 30 seconds each side dry, then add 1 teaspoon ghee around edges, pressing lightly. Flip twice till deep golden spots appear. Ghee's high smoke point crisps without burning.
Serve and store
Serve instantly with chai, omelette or dal fry. Leftover dough keeps 2 days refrigerated. For daily cooking stock pure Swaad-e-Khaas desi ghee.
